  • 3 Tbsp coconut flour
  • ¼ tsp baking powder
  • ¼ tsp vanilla
  • 1 scoop whey protein (or other protein of your choice)
  • 3 large eggs
  • ¼ cup coconut milk


  1. Whisk all ingredients together until smooth. If the batter appears too thick, add another tablespoon of coconut milk
  2. Heat a skillet or griddle to medium heat and grease with coconut oil
  3. Drop the batter into the skillet
  4. Cook until golden, approximately 2.5 minutes per side
