Fluffy Coconut Protein Pancakes

Ingredients
- 3 Tbsp coconut flour
- ¼ tsp baking powder
- ¼ tsp vanilla
- 1 scoop whey protein (or other protein of your choice)
- 3 large eggs
- ¼ cup coconut milk
Instructions
- Whisk all ingredients together until smooth. If the batter appears too thick, add another tablespoon of coconut milk
- Heat a skillet or griddle to medium heat and grease with coconut oil
- Drop the batter into the skillet
- Cook until golden, approximately 2.5 minutes per side
