Simple Paleo Fudge
Ingredients:

  • 1/2 cup chopped almonds
  • 1/3 cup coconut oil, melted
  • 1/3 cup unsweetened cocoa powder, sifted
  • 1/4 cup raw honey, preferably Manuka honey (Vegans can substitute the honey with agave syrup, coconut nectar, or other preferred vegan sweetener)
  • 2 tsp vanilla extract
  • A pinch of salt

Instructions:

  1. Put melted coconut oil (it should be liquid) into a medium-sized bowl. 
  2. Add cocoa powder to coconut oil and whisk.
  3. Stir in the honey and the vanilla until combined.
  4. Add chopped nuts and salt, then pour the whole mixture into a small container lined with plastic wrap or parchment.
  5. Place the fudge in the refrigerator for several hours to allow it to set. Once it's firm, remove and cut into squares. 
The cocoa and nuts will give you the perfect energy boost.
