- 1/2 cup chopped almonds
- 1/3 cup coconut oil, melted
- 1/3 cup unsweetened cocoa powder, sifted
- 1/4 cup raw honey, preferably Manuka honey (Vegans can substitute the honey with agave syrup, coconut nectar, or other preferred vegan sweetener)
- 2 tsp vanilla extract
- A pinch of salt
Instructions:
- Put melted coconut oil (it should be liquid) into a medium-sized bowl.
- Add cocoa powder to coconut oil and whisk.
- Stir in the honey and the vanilla until combined.
- Add chopped nuts and salt, then pour the whole mixture into a small container lined with plastic wrap or parchment.
- Place the fudge in the refrigerator for several hours to allow it to set. Once it's firm, remove and cut into squares.
